At the heart of our DELI-SCANSM program are databases of market information that
have been continually updated since our inception in 1971. Every year we collect:
Names, addresses and key personnel of all major service deli operators in the
continental United States;
Number of service delis operated;
Total service deli sales; and,
Product movement data for top-level deli and detailed meat and cheese categories
We conduct a census, not a sampling, of the service deli market, collecting annual
data from:
Over 250 chain supermarket offices with 16,000+ service delis;
Over 100 supermarket wholesalers who service 17,000+ service delis; and,
Over 100 independent supermarket offices with 400+ service delis
