At the heart of our BAKE-SCAN program are databases of market information that

have been continually updated since our inception in 1971. . . Every year we collect:

Names, addresses and key personnel of all major in-store bakery operators in the continental
United States;

Number of in-store bakeries operated;

Total bakery sales; and,

Product movement data, broken down between production methods, for all major in-store
bakery product categories

We conduct a census, not a sampling, of the in-store bakery market, collecting annual
data from:

6 club stores and supercenter offices with 2,300+ bakeries;

Over 250 chain supermarket offices with 15,000+ bakeries;

Over 100 supermarket wholesalers who service 12,000+ bakeries; and,

Over 100 independent supermarket offices with 500+ bakeries
